Food trucks debut at UHCL

Ready your appetites, food-lovers! Food trucks have made their way to UHCL.

Right now, two food trucks are rotating Tuesdays from 11:00 A.M. To 3:00 P.M. Maybe you have spotted one on the curb between the Bayou building and the Student Services building. But have you dived into the delicious food truck frenzy yet?

Coreanos food truck offers a variety of dishes, from Korean BBQ Tacos to Quesadillas. Just like their slogan boasts, Coreanos is Mexican Cuisine with Korean In-Between. If their intriguing Mexican/Korean menu isn’t enough, Coreanos was named the number one food truck in Texas and the eighth best food truck in the nation by Smithsonian Magazine. Yelp has also named it one of the top ten eateries in Austin.

Happy Endings food truck serves Asian-fused foods. Specializing in multi-cultural 100 percent beef premium hot dogs served on Hawaiian-steamed rolls (baked daily), they have 9 delectably different options to choose from. Their menu also features fusion fries, grandma’s recipe home-made egg rolls and taco baos.

The Coreanos and Happy ending food trucks add a little variety to UHCL food services and word around campus is they’re a hit. While there is no word on what other kinds of food trucks we could see at UHCL, there are efforts being made to bring in about ten total trucks on a rotating schedule in the future.

With downward expansion bringing more students to campus, food trucks are sure to see growing business here. Right now there are two trucks serving UHCL students and hopefully the future will only bring more of these mobile eateries.

For now, one thing is certain: If you haven’t already dug-in to one of these mouth-watering food truck meals, you are missing out!
